This is a super easy and equally delicious fried noodle recipe called MamakMee Goreng. It uses common staples from your cupboard and requires little time.

INGREDIENTS
400 g yellow egg noodles
¼ white onion, diced (50g)
4-5 curry leaves (optional)
2 small green chillies (sliced)
1/5 white cabbage, sliced (45 g)
1 small potato, boiled & diced (50 g)
¼ pack tofu, fried (optional)
2.5 tbsp tomato ketchup
1 tbsp soy sauce, light
A large inch of sugar
2 tbsp veg oil
METHOD
Mix together tomato ketchup, soy and sugar. Set aside. Heat veg oil, add onion and fry for 2 minutes till slightly softened. Add curry leaves and green chillies. Fry for 30 seconds. Add cabbage, potato and tofu. Fry 1 minute. Add sauce and noodles. Mix together and cook for 2 more minutes or till noodles are soft.
You can add 1 tablespoon of water if noodles stick to bottom of pan.
Dish on to plate and serve. Garnish with chives if you have any lurking in the fridge. Enjoy!
